Not sure about it being in the manual, likely just an omission.

Root should be in /proc/fs/lustre/mds/{MDS}/ in the 1.6.5 release.

The files that I see are:

# lctl get_param mds.*.*squash*
mds.lustre-MDT0000.nosquash_nid=0@<0:0>
mds.lustre-MDT0000.rootsquash=0:0

These files are of the form nosquash_nid={single NID which will not be
squashed}, and "rootsquash={uid:gid to remap root access to}".
