Thanks Brian. I have suspected this is the issue. I'll load up 5.3 and try again.

You need the RHEL 5.3 userspace (or at least cryptfs-utils from it) to
use the RHEL 5.3 kernel.  This is indeed a pretty rare event, but is
necessary for the RHEL 5.3 kernel.
